Singapore

We are one of Singapore’s leading French fine dining destinations. Our restaurant is built on uncompromising standards, exceptional hospitality, precision execution, and a deep respect for French culinary tradition with contemporary excellence.

We are seeking an experienced, highly polished, and service-driven Restaurant Manager to lead front-of-house operations and help elevate every aspect of the guest experience to world-class standards.

Key Responsibilities

Guest Experience & Service Excellence

  • Lead and oversee all front-of-house operations to ensure flawless execution of service at every touchpoint
  • Deliver exceptional, intuitive, and highly personalized guest experiences consistent with Michelin-starred standards
  • Build strong relationships with VIPs, regular guests, media, partners, and international clientele
  • Handle guest feedback and service recovery with professionalism, discretion, and elegance
  • Ensure all service rituals, standards, and details are executed with consistency and precision

Leadership & Team Development

  • Inspire, mentor, and develop the front-of-house team to achieve exceptional performance
  • Conduct daily briefings, training sessions, and ongoing coaching
  • Foster a culture of excellence, discipline, teamwork, and accountability
  • Work closely with the Executive Chef and senior leadership team to ensure seamless collaboration between kitchen and service

Operations Management

  • Manage reservations flow, floor planning, service pacing, and staffing requirements
  • Maintain exceptional standards in restaurant presentation, hygiene, and operational readiness
  • Oversee wine and beverage coordination together with the Sommelier team
  • Monitor operational KPIs, labour productivity, guest satisfaction, and financial performance
  • Ensure compliance with all local regulations and company SOPs

Strategic Contribution

  • Contribute to the restaurant’s ongoing journey toward achieving a third Michelin star
  • Continuously identify opportunities to elevate service standards and operational excellence
  • Support brand reputation, media engagements, collaborations, and special events where required

Requirements

  • Minimum 5–8 years of experience in luxury hospitality or Michelin-starred fine dining
  • Previous experience as a Restaurant Manager or senior FOH leadership role in upscale French or European fine dining preferred
  • Deep understanding of Michelin-level service standards and luxury guest expectations
  • Exceptional leadership, communication, and interpersonal skills
  • Strong operational and commercial acumen
  • High attention to detail and composure under pressure
  • Professional presence, polished grooming, and refined service etiquette
  • Passion for gastronomy, wine, and hospitality excellence
  • Fluent English required; additional languages are an advantage

Preferred Attributes

  • Experience working in internationally recognised Michelin-starred restaurants
  • Strong knowledge of French cuisine, wines, and fine dining service rituals
  • Ability to lead high-performance teams in a demanding and ambitious environment
