L ocated between Chinatown and Clarke Quay, 21 Carpenter is a heritage boutique hotel under Design Hotels, where history meets contemporary luxury.
At the heart of the hotel is Kee’s, a neo-bistro and bar concept blending European techniques with refined Asian influences. The beverage Programme plays a critical role in shaping the overall dining experience and driving revenue.
Role overview
We are seeking a driven and guest-focused Assistant Beverage Manager to lead and elevate the beverage programme at Kee’s. This role is responsible for owning beverage revenue performance, leading bar operations, and delivering exceptional guest experiences through strong upselling and food pairing expertise.
The incumbent will take a hands-on leadership role on the floor while shaping a profitable, innovative, and experience-led beverage strategy.
Key Responsibilities
1. Beverage Revenue Ownership & Performance
- Own and drive total beverage revenue, including wines, spirits, cocktails, and non-alcoholic offerings.
- Deliver strong upselling performance to increase average check and beverage-to-food ratio.
- Analysis sales trends and implement strategies to improve revenue and profitability.
- Support achievement of departmental KPIs (e.g. beverage revenue growth, GOP margins).
2. Bar Operations & Leadership
- Oversee the daily bar operations, ensuring smooth, efficient, and high-quality service delivery.
- Maintain consistency in drink preparation, presentation, and service standards.
- Lead, supervise, and schedule the bar team to optimise productivity and service flow.
- Ensure compliance with licensing, hygiene, and safety standards.
3. Food Pairing & Guest Experience
- Champion food and beverage pairing to elevate the overall dining experience.
- Confidently engage guests with recommendations and storytelling.
- Personalized guest interactions to drive satisfaction,retention, and repeat visits.
- Handle guest feedback and service recovery with professionalism.
4. Beverage Programme Development
- Curate and continuously enhance wine lists, cocktail menus, and specialty beverages.
- Introduce seasonal and innovative beverage concepts aligned with Kee’s identity.
- Collaborate with the Kitchen and Restaurant Manager to ensure strong menu synergy.
- Optimize pricing strategies to balance guest value perception and profitability.
5. Cost Control & Inventory Management
- Manage beverage cost, stock levels, wastage, and shrinkage effectively.
- Oversee procurement, supplier relationships, and product selection.
- Conduct regular stock takes and ensure accurate inventory records.
- Drive gross profit (GP) through cost control and strategic sourcing.
6. Team Development
- Train and coach team members on:
- Beverage knowledge
- Upselling techniques
- Food pairing skills
- Build a sales-driven and knowledgeable team culture.
Job Requirements
- Minimum 5 years of relevant experience in beverage leadership within upscale restaurants or hotels.
- Proven track record in driving beverage sales, upselling, and revenue growth.
- Demonstrated experience in menu development and beverage programme curation.
- Strong understanding of cost control, inventory management
- Demonstrate leadership skills with experience in managing and developing teams.
- Strong communication and interpersonal skills with the ability to engage guests confidently.
- High level of service orientation with a passion for delivering exceptional guest experiences.
- A strong storyteller who can elevate guest experiences through beverages
